I'm back.. and hungry!

Woohoo, I am finally posting again!  Sorry for my absence lately.  With the craziness of Christmas and New Years out of the way, I finally have more time to sit down and catch up on the ole blog.

Although I have been gone from the blog world, I have certainly not missed out on the mouth watering recipe world :)  Here are a few foods that have been baking in our kitchen.


This was my very first lasagna and let me tell you, it was very good!!  Adam and I sat down and almost ate the whole thing, it-was-that-good.  You want the recipe? It is as follows:

1 lb bulk Italian sausage or lean ground beef (I used the beef)
1 (24-oz) jar market pantry pasta sauce (any flavor-I used the traditional)
1 cup water
2 (15 oz) containers ricotta cheese
2 eggs, slightly beaten
2 cups mozzarella cheese
1-1/2 cups grated parmesan cheese
9 market pantry oven ready lasagna noodles
1 tsp dried parsley or basil leaves

Heat the oven to 375 degrees.  Cook the sausage or beef until browned then drain and stir in pasta sauce and water.  In a separate bowl, combine the ricotta cheese, eggs and 1-1/2 cups mozzarella cheese and 1 cup parmesan cheese. Then, in a 13 x 9 in baking dish, spread 1-1/2 cups meat sauce and top with 3 lasagna noodles.  Half the ricotta mixture (approx. 2-1/2 cups) and spread on top of noodles with one cups of the meat sauce too.  Repeat those steps once.  Top with remaining noodles and sauce and cover tightly with tin foil.  Bake for 60-70 min or until lasagna is tender.  Remove the foil, top with remaining cheeses and parsley and bake for an additional 5 minutes.  Once finished, let it stand for 10 min then cut and serve.



Yes, those are sausage balls and they are delicious.  I have made these on several occasions and they are always a big hit!

1 lb sausage
1/4 cup water
2 cups Bisquick
2 cups cheddar cheese

Mix all above ingredients, form into small balls, and cook for about 25 minutes on a 350 degree preheated oven.  You will not regret making these!

Weekend Recap

Yes, I do realize that it is Wednesday, but I have been so busy I haven't had a chance to sit down and update the ole blog :)  So here goes.  Last Friday I didn't have to work so I got to spend the day with some of my favorite kiddos, Emma and Jake.  I started babysitting for Emma and her sister Kate when I was in college at NC State and soon after Jake came along.  Now, I occasionally babysit for them and enjoy every minute of it.

Friday night, I got home from babysitting and Adam got home from work and we were both craving something really good for supper but didn't necessarily want to go out so I decided to make shrimp and grits and they were AMAZING.  Enjoy the pictures below and I will be sure to post the recipe later (it's a Paula Dean special plus a few added items)

Saturday was the second to last home NC State football game for the year and we played Klampson errr Clemson.  Honestly, no one really expected/thought we would win the game but holy cow, the football team looked like a different team.  Everyone was hyped up and ready to dominate.  And, thats exactly what they did :)

Santa, Can you hear me?

Todays blog post is inspired by my top 5 Christmas List wants for this year:

1.  Micheal Kors Rose Gold Watch


2.  Tory Burch Flats ( I really like the black, brown and gold:)


3.  A new pair of gap jeans (I like the wider leg but would really settle for a regular small flare pair as well)


4.  An area rug for our living room... I like both of the ones below.  Yes, I have a minor obsession with Crate and Barrel :)


5.  And to round out the list, I really love Dolce and Gabana's Light Blue perfume.  It has a light yet refreshing smell and its not too strong.

Reckless Kelly, Mickey and the Motor Cars and Duke Basketball

Last thursday, Adam and I went to Lincoln theater to see Reckless Kelly and Mickey and the Motor Cars perform.  Their genre is a Texas country sound that is easy to sing a long to.  I worked a twelve hour shift that day and left straight from the hospital to make the concert (yes, I changed in my car and it was quite difficult).  Needless to say I was a little tired by the end of the night, but we had a great time.



Both of these bands and a few more well-known Texas country bands all join together each year in Challis, Idaho to perform at what is known as the Braun Brothers Reunion.  Adam went two years ago and said that it was awesome.  Hopefully one of these years we will both get to go!

Last Friday night, we went and saw Duke play Belmont at Cameron Indoor.  I have always wanted to see a game inside of this arena because of all the hype and craziness of the Cameron Krazies.  It was a good, close game that came down to the last shot and kept us on the edge of our seats pretty much the entire time.

Catching up

It's been awhile since the last post and I apologize for that but life has been so crazy.  So I will take this opportunity to catch you guys up!  First of all, in response to my last post, N.C. State ended up beating Carowina  err I mean Carolina in a very low scoring but entertaining game.


All in all it was a great weekend and nice to see the Wolfpack come out on top!


A few weeks ago, Adam was in New Bern for the week on a business trip and I went down and visited him as a little mini vacation.  Not only did I get to spend time with him but I also got to see one of my good friends from college, Megan.  We met downtown for supper at the Chelsea and had the famous shrimp and grits.  A little disclaimer here: I love any size, shape, form of shrimp and grits and the Chelsea's did not let me down.  


Megan ordered a few blue drinks that were reminiscent of the ones we had in the bahamas on our senior year college cruise.  They were delicious... and pretty :) 


After dinner we headed downtown New Bern to hang out and have a few drinks.  It was so nice to hang out with my husband while he was away and to see Megan.

Put your gameface on!

I do realize that it is only Wednesday and the UNC/NC State game is on Saturday, but as the week goes on Adam and I cant help but get more and more excited about kickoff.  Considering it is the biggest game of the year, I am sure that everyone will be in rare form while on their best behavior of course :)  The game is at noon which most people gripe about but I actually like the early games.  I enjoy having daylight after a football game.  Anyways, I will be sure to have a full recap after the weekend craziness.  Happy Wednesday y'all!
